Den blir s\u00e5 elastisk och j\u00e4ser massor. Br\u00f6det blir dessutom j\u00e4tte gott, det kan alla v\u00e5ra grannar intyga! Jag bakade med h\u00e4lften dinkel och h\u00e4lften vetemj\u00f6l mest f\u00f6r att det var vad jag hade hemma. I receptet nedan \u00e4r det bara dinkel, men anpassa det som det passar b\u00e4st. M\u00e4ngden j\u00e4st anpassar man beroende p\u00e5 hur bra levainen j\u00e4ser, om det \u00e4r mycket j\u00e4skraft i levainen kan man utesluta j\u00e4sten helt.<\/p>\n<p>Levain:<br \/>\n200 g vatten<br \/>\n150 g vetesurdeg p\u00e5 russinj\u00e4st<br \/>\n150 g vetemj\u00f6l<br \/>\n100 g fint r\u00e5gmj\u00f6l<\/p>\n<p>F\u00e4rdig deg:<br \/>\nLevainen fr\u00e5n dag 1<br \/>\n600 g vatten<br \/>\n1000 g dinkelsikt<br \/>\n40 g havssalt<br \/>\n10-20 g j\u00e4st<\/p>\n<p>Dag 1:<\/p>\n<p>1. Blanda alla ingredienser och arbeta degen i hush\u00e5llsmaskin i 10 minuter.<\/p>\n<p>2. L\u00e4gg levainen i en oljad bunke med lock och l\u00e5t st\u00e5 i rumstemperatur i minst 5 timmar, g\u00e4rna \u00f6ver natten.<\/p>\n<p>Dag 2:<\/p>\n<p>1. Blanda levainen med \u00f6vriga ingredienser, utom saltet.<\/p>\n<p>2. Arbeta degen i hush\u00e5llsmaskin i 15 minuter, eller f\u00f6r hand i 30 minuter.<\/p>\n<p>3. Tills\u00e4tt saltet och arbeta degen i ytterligare 5 minuter.<\/p>\n<p>4. L\u00e5t degen vila i bunken i 2 timmar.<\/p>\n<p>5. Forma degen f\u00f6rsiktigt till 3 runda bollar och l\u00e4gg dem i mj\u00f6lade j\u00e4skorgar med skarven ner\u00e5t.<\/p>\n<p>6. L\u00e5t br\u00f6den j\u00e4sta i 2 timmar i rumstemperatur eller i kylen \u00f6ver natten.<\/p>\n<p>7. S\u00e4tt ugnen p\u00e5 250 grader och st\u00e4ll in en tom pl\u00e5t l\u00e4ngst ner i ugnen.<\/p>\n<p>8. Flytta f\u00f6rsiktigt \u00f6ver br\u00f6den med skarven upp\u00e5t till en pl\u00e5t med bakpl\u00e5tspapper.<\/p>\n<p>9. St\u00e4ll in pl\u00e5ten i ugnen och h\u00e4ll genast en kopp kallt vatten p\u00e5 den f\u00f6rv\u00e4rmda pl\u00e5ten. St\u00e4ng ugnsluckan och s\u00e4nk temperaturen till 200 grader. Sl\u00e4pp ut \u00e5ngan efter 20 minuter.<\/p>\n<p>10. Gr\u00e4dda br\u00f6den i ca 35 minuter eller tills innertemperaturen \u00e4r 98 grader.<\/p>\n<p>11.
